Spaghetti with scallops, parsley and garlic

A gorgeous dish, full of rich aromas that is so easy and quick to make! I really enjoy preparing tasty and quick meals for my family as time is very precious during lunch breaks. Seafood, white wine and pasta is an amazing combination of flavors!! What I like about pasta is that its neutral taste absorbs all the flavors of all the ingredients and “takes” your dish to another level!



Serves 4
Preparation time :15 minutes Cooking time : 20-30 minutes



1 package of spaghetti

1 package of mini scallops

1 bunch of parsley

1 medium onion

6 cloves of garlic

1/2 cup of dry white wine

4-5 tablespoons of virgin olive oil




Begin with preparing the scallops. If you are going to use frozen scallops make sure once the scallops are defrozed they are well drained. Season your scallops with  a bit of salt and pepper.



In a shallow pan add 4 tablespoons of olive oil, the onion and the garlic. Stir for 5 minutes continually . Let the scallops cook  in a different pan for about 2 minutes or until their flesh turns light brown. Add 1/2 teaspoon of butter and stir well. Butter will give your scallops a very rich flavor.  Once they are cooked place them in the pan where you have the rest of the ingredients. Add the wine and stir again. Add the parsley and let all ingredients be cooked for 1-2 minutes.



In the meantime in a large pot boil water. Add two tablespoons of olive oil and a bit of salt. Then add your spaghetti. Stir the pasta and let it cook according to  your taste.



Once the pasta is cooked drain it and pour in the pot the mixture of scallops.  Stir well and serve!
